If it is more than 6 months, you can still be registered in Denmark if you take vacations and weekends in Denmark - however, it is assessed whether you meet the requirements, which can vary from case to case.
You don't need a work permit if you are an EU citizen, as Germany is a member of the EU. If you get a job in Germany, you automatically stop paying tax in Denmark and are then taxed in Germany. The two tax systems are similar in their tax calculation.
Health insurance is compulsory in Germany, and you cannot use the Danish health insurance unless you are still a Danish citizen and pay tax in Denmark. Generally, it is the employer who must ensure that you are registered for this.
